Japanese noodles with Imperial Auslese caviar and Rittmeyers yuzu lime sauce

Sōmen noodles succeed in combination with creamy-fresh yuzu lime sauce with a greeting from Japan, crowned with Imperial Auslese caviar. A treat that is as quick as it is extraordinary – also for guests!

Our tip:

Sōmen are fine light wheat noodles from Japan, but this recipe also works well with tender ramen noodles or fine Italian pasta. The caviar is also variable – try the recipe with your favorite caviar. Enjoy the interplay of cool, crunchy caviar with the fresh creaminess of the hot sauce.

Cut the spring onion into fine rings and rinse under cold water in a colander. Drain. Cut the nori into short, thin strips with scissors.

Cook noodles in salted water according to package directions. Heat the sauce. Sieve the noodles and turn them into dumplings while hot using a fork. Arrange on preheated plates.

Puree the sauce with the stick and pour over the pasta. Top with caviar, sprinkle with spring onions and nori strips and serve immediately.
